Chocolate chia pudding

This delicious, naturally sweet, refined sugar free, vegan and gluten free treat is not only a hit with kids and kids at heart, but also a super food dessert, containing loads of antioxidants, omega 3, magnesium and even some muscle building, immune promoting protein. And the best part? It should only take no more than 10 minutes to prepare.

Chocolate Chia Pudding (Gluten Free, Dairy Free, Refined Sugar Free)

Ingredients:

6 tbsp Chia Seeds

2 cups rice milk

12-15 pitted dates

1.25 tbsp raw cacao

1 tsp organic vanilla essence

Method:

  • In a bowl, mix Chia seeds with rice milk. Cover and place in the fridge for an hour.
  • Get Chia and rice milk mixture out of the fridge, and place in a blender or food processor.
  • Add pitted dates, cacao and organic vanilla essence and blend well for 5 minutes or until all ingredients are blended well together and a nice, thick, pudding – like consistency is achieved.
  • Place in small cups or bowls, seal and keep refrigerated.
You can add a topping to your pudding such as desiccated coconut, blueberries, crushed nuts or sunflower seeds.
Enjoy for morning or afternoon tea or as a healthy dessert.
