This Vegan Chocolate Cheese Cake Recipe is so easy to make it's not funny. All you need is a good food processor and 20 - 30 free minutes tops. I was first introduced to this wholesome, filling, nutritious & delicious recipe by Alessandra Alfredo, a Healthy Chef and Nutrition researcher a few years back, and since then I have prepared it many times for family and guests (quite often not mentioning the fact it is vegan nor the interesting, unusual ingredients it contains), as well as at retreats and cooking demonstrations. ½ cup cashews
½ cup any other nuts you like
1 cup desiccated coconut
1 cup apricots (pre – soak for 20 minutes)
Place all ingredients in a food processor for about 5 minutes. Cover a round quiche dish with the mixture and spread evenly.
3 ripe avocados
¼ - ¾ cup of raw cacao (I use about half a cup)
1 ¼ cups dates, pitted
½ cup coconut oil
Place all ingredients in a food processor for about 5 minutes or until the entire mixture is smooth. Cover the pie crust with the chocolate mixture. Refrigerate overnight before serving, or place in freezer for a couple of hours before serving.
